Character: Abundant froth, fine and persistent perlage, onion skin color, intense, fruity aroma with pleasant hint of red fruits. Pinot noir gives this Franciacorta a special body and vigor.

Aging: After a few months of aging in stainless steel tanks, the draught is carried out to initiate the secondary fermentation in the bottle, a period during which the frothing takes place. The bottles remain for a period in our cellars and then disgorged and dosed, sealed with a cork and cage, before further aging in the cellar.
Vinification: Hand-harvested grapes are crushed-stemmed and sent to the press where they are cooled to a temperature below 5°C so that the fermentation process does not begin, then left to cold macerate so that the skins in contact with the must release the desired amount of color. Following this process, classic pressing will take place.
